Well, this morning was pretty sweet. I woke up to my site being honored as an official honoree in the Webby Awards. Some might think that's isn't a very big deal, but I'm going to relish in the fact that I'm the only food-themed social network to make the list. :) (I may even celebrate with a Sprinkle's Cupcake.) What's even more amazing is that our site is completely grassroots. No big marketing budgets.. no big ... ah... really anything.. I just thought I'd share with you how happy this makes me. Easter Cheesecake Baskets

Ingredients:
2 pkgs. (8 oz. each) Philadelphia Cream Cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
12 Nilla Wafers
1-1/2 cups Angel Flake Coconut, tinted green
36 small jelly beans
12 pieces shoestring licorice (4 inch each)
12 paper-lined medium muffin cups
Directions:
Preheat oven to 350°. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; beat just until blended. Place wafer on bottom of each of 12 paper-lined medium muffin cups. Spoon cream cheese mixture evenly over wafers. Bake 20 minutes or until centers are almost set. Cool. Refrigerate at least 2 hours. Top evenly with coconut and jelly beans just before serving. Bend each licorice piece, then insert both ends into each cheesecake to resemble the handle of a basket. Store leftover cheesecakes in refrigerator.
Makes 12 servings.
Breakfast Panini by Joelen "I love panini sandwiches. Whether it's breakfast, lunch or dinner, I can always make a simple sandwich into a full meal. This morning, I made my daily breakfast panino. It's a great way to start the day. Here's the recipe:"
Ingredients:
2 slices lean ham
1 scrambled egg or egg substitute
1 slice American cheese
2 slices Italian pane bread
Canola or butter cooking spray
Chopped parsley
Directions: Layer the ham on one slice of bread. Scramble egg in a pan with cooking spray. Lay scrambled egg over ham. Top with slice of cheese. Place other slice of bread on top. Spray top of sandwich with cooking spray and sprinkle chopped parsley. Lay parsley side down on panini press, grill pan or frying pan. Spray top of sandwich with cooking spray and sprinkle chopped parsley. Press sandwich to increase contact with grill so it can brown and become crispy. Cook for about 3 minutes until bread is toasted brown.
